In Las Vedras, Pedro and Sónia farm 2.5 hectares of old vines (30–80 years) in the windy, Atlantic-influenced hills of Torres Vedras, near Lisbon. Planted on clay-limestone soils, their vineyards—Pero Negro, Portela do Bispo, Barro and Dois Portos—are rooted in local heritage.\u003cbr\u003e\u003cbr\u003eIn the cellar, they follow a low-intervention, artisanal approach: minimal sulphur, extended ageing in used wood and bottle, and practice patience while the wine does its own thing.
