Located in the southern part of Côtes du Rhône, fifth-generation winemaker Anaïs Vallot brings a refreshing, modern approach to the innovative vineyards of Vallot. She took the reins from her father, François Vallot, who was deeply passionate about the land and an early advocate for organic farming. François transitioned to organic practices in 1990, became certified in 2003, and earned his biodynamic certification in 2007. The vines, around 40 years old, grow in silty calcareous clay soils over limestone bedrock.

Anaïs' winemaking style is centered on freshness and minimal intervention. This blend is crafted from grapes sourced from various plots surrounding their winery. The result is a wine that is fruit-forward with an earthy complexity and a subtle hint of white pepper. Perfect for a weeknight meal, this wine evokes the warmth of a cozy winter evening.
