Saumur Blanc 'Le Gory' 2021
Mathieu Vallée took over the vineyards of Château Yvonne in 2007. While the château dates back to the 16th century, it wasn’t until 1813 that wine production began. Over the years, the estate has changed hands a few times, but fortunately, it’s mostly been passed to passionate vignerons. The estate primarily grows Cabernet Franc, with a small amount of Chenin Blanc, both farmed organically since 1997. When Mathieu took ownership, he decided to retain the name as a tribute to the dedicated caretakers before him.
Known for crafting some of the region’s finest wines, this producer’s standout white is undoubtedly the 'Le Gory.' Grown in vineyards rich with red clay, sandstone, and limestone, the grapes reach optimal ripeness, resulting in exceptional depth and character.
The wine is aged in new oak, followed by an additional year in bottle before release, allowing it to develop beautifully. The final expression is vibrant and energetic, with a crisp, mouthwatering acidity that leaves a lasting impression.
