Brother-and-sister duo Antoine and Héloïse have taken over their family’s vineyards in the southern Côte de Nuits. Blessed with old, organically farmed vines, Antoine is reshaping the story here, crafting wines we want to drink now and even some to cellar for later. He leads the winemaking, while Héloïse runs the operations behind the scenes. Trust us, this is a young winemaker to watch.
The Gamayoptere is made from organically farmed grapes in Fixin, grown in clay and limestone soils. It is aged in old barrels with no added sulfur. Whole clusters undergo seven days of semi-carbonic maceration after foot treading, followed by seven months of aging in a mix of vessels—primarily stainless steel, with small portions in amphora and fiberglass egg. The result is a fresh, highly drinkable (“crushable”) wine.
