A region in South West Franc, Cahors, is home to vineyards that have been in the Ilbert family for generations, with the fruit traditionally sold. In 2003, Julien, the son, returned to the estate and decided to bottle their own wine. Now, he works alongside his wife, Sophie, to craft fresh expressions of the terroir. The land has been certified organic since 2015, though it has been chemical-free well before then.
