After traveling around France, Aymeric Paillard put down roots in Tournon and released his first vintage in 2014. Farming organically from the start, he works his vineyards by hand and with horse, letting the granite-rich soils and old Syrah vines do the talking. In the cellar, it's a hands-off approach with native fermentations, no fining or filtering, and minimal sulfur. The result? Fresh, balanced Syrah with plenty of structure, finesse, and a real sense of place.
