The winery has been in the family since 1834, with François and his sister Claude now running the estate. In 2005, they fully transitioned to biodynamic practices, with minimal intervention in the winemaking process to preserve the wine's freshness and allow the terroir to shine. François has been a pioneer in the organic and biodynamic movement in the region and is highly respected within the wine community. His family’s wines are considered some of the finest in the Côte d'Or.

François also embarked on a personal project, sourcing grapes from neighboring vineyards that also follow biodynamic farming methods. The process of selecting the best grapes is key to creating the highest quality wines. Once the grapes are sourced, minimal intervention is used to maintain their integrity. The Bulles Dog is a playful pét-nat that delivers rich flavor and depth, without being overly fussy.
