Vignes de Montgueux
Keeping it in the family, and we like it. This family run estate produces some of the finest Blanc de Blancs available today. Jacques Lassaigne is a 4.7-hectare vineyard in Montgueux with prime southeastern exposure, planted entirely to Chardonnay.
Emmanuel Lassaigne, Jacques’s son, has been working the vines since 1999 and now leads the estate. All fermentations begin with indigenous yeasts, sulfur is used sparingly at pressing to prevent oxidation, and never added again. Emmanuel also disgorges every bottle by hand, a less common practice in Champagne, so he never has to top up after disgorgement.
This particular wine is a vibrant expression of Chardonnay, with aromas of green apple and pastry—what’s not to love? On the palate, it delivers brightness, a burst of acidity, and a touch of minerality (that’s the soil speaking to you!). As always, we love Champagne for any occasion, but if you’re saving this one, we recommend pairing it with oysters, light hors d'oeuvres, or sushi.
